So simple. SO full of protein. SO satisfying.

Ingredients
4 teaspoons extra-virgin olive oil
2 teaspoon red wine vinegar
1 teaspoon fresh lemon juice
1 teaspoon Dijon mustard
Dash of salt
Dash of freshly ground black pepper
1 cup cooked quinoa (LOVE the microwave pouches. BIG time saver)
12 cup unsalted tinned chickpeas, rinsed and drained
1/1 cup chopped cucumber
2 tablespoons crumbled feta cheese
10 cherry tomatoes, halved
1 tin solid white tuna in water
Optional chopped fresh parsley to serve
Preparation
Step 1
Combine first 6 ingredients in a small bowl, stirring well with a whisk.
Step 2
Combine quinoa and remaining ingredients in a bowl. Drizzle with dressing; toss gently to coat.
