About the Recipe
This is a simple, delicious, carb-rich recipe; full of antioxidants, and low-GI (slow release) carbs.
4 cups water
2 cups rolled oats
½ teaspoon Kosher salt
½ teaspoon ground cinnamon
pinch of nutmeg
3 sweet apples peeled and chopped; any kind
¼ cup honey or maple syrup
¼ cup pecans chopped
Add the water to a medium pot and bring to a boil over medium-high heat. Add in the oats together with the salt, cinnamon, nutmeg and stir well to combine.
Next, add in the apples. Reduce the heat and let it simmer over medium-low heat, for 10-12 minutes stirring occasionally.
Once the apples are tender, stir in the honey and pecans.
Turn the heat off, cover the pot and let the oatmeal sit for 5 minutes.
