Mediteranean Chickpea Salad

My recipe. Delish.
1 package microwavable quinoa (red and white or all-white)
1 Large cucumber
1/2 red onion (diced)
1 tin chickpeas (drained and rinsed)
1 small bunch parsley, chopped
1 small bunch mint, chopped, 1/4 cup pistachios, lightly crushed (optional)
1 package (200g) feta, crumbled
2 tbsp olive oil
juice of one lemon
salt and pepper to taste
MAKE IT
No need to microave the quinoa; it should be fine to eat cold (check pack to be sure) and if it NEEDS cooking, then obviously... ). Combine all ingredients into a big bowl and mix 'em up. Store, covered, in fridg for up to 4 days.
IF you want this salad to last more than about 3 days, you may want to add fresh cucumber each day, as the cucue *could* get mushy. But it lasts me 3 - 4 days, generally, and I can't be bothered to do that.
